I was wondering when building houses how important are the stats of the resource and how important is the quality of the components used.

The answer to both questions is: Completely unimportant.
Feel free to use whatever junk resources you have. There are no stats on houses that can be changed through experimentation, so there's no need to worry about the quality of the materials.

so are harvestors and factories the only things in architech that require high quality resources?

The experimantal BER, storage, and whatever on the factories has no realtion to reality.

Not factories, but crafting stations and harvesters require HQ resources. To be honest, that's one of the reasons I got into architecture -- you can start up a decent business right away without spending months acquiring really good resources. I know it's not necessarily fair to the folks that have been doing it for over two years, but you take what you can get.

you need massive amounts of ore though... 200k of ore will only make 1000 structural modules... and each wall takes 10 modules plus some ore

For this reason become very familiar with Fermionic Siliclastic Ore. It always spawns with 90%+ concentration areas.
