A master pistoleer will have a Pistol Speed of +79 and Pistol Accuracy of +105. If this pistoleer wishes he may work up the pistol branch of the Bounty Hunter skill tree (with 13 skill points left over) giving him a new Pistol Speed of +129 and Pistol Accuracy of +165.

At some point does it become fruitless to have so much of each category?

Speed caps at +100. Accuracy may still have value up to and beyond that limit.
